My Weekend



There isn't much my boss likes more than having plenty of something good to eat in the refrigerator that he can munch on all during the day so last Friday he said, why don't you fix something good this weekend and bring it Monday.

I suggested chicken salad so he agreed. After Linda & I finished at Kaden's birthday party we stopped at Sams Club for a deal on chicken breasts. This would be the largest batch I have ever made at one time since I wanted enough for work and enough for home and Linda's mama.

My 8 qt pressure cooker is such a blessing. It took 2 cookings but they were done quickly. I used bone in breasts with skin on and ended up with plenty of broth, enough to cook pasta and have more to freeze for another time. I like being frugal.

When it was all said and done I had used 2 large packages of breasts, 3 large jars of salad cube pickles, 3 regular sized wide mouth jars of Miracle Whip, 3 chopped onion, one bunch of celery chopped, a healthy squeeze of yellow mustard and finally almost a dozen boiled eggs. You should have seen my boss today. He was in food heaven.

It's really rewarding to see anyone enjoy something you worked on with love and care. Some of the guys even had chicken salad sandwiches for breakfast, maybe since the price was right.

  2. You fed the masses, Odie, and you deserve a great big raise! I know that you enjoyed cooking it as much as the gang enjoyed eating it. Glad it worked out so well! Did Rocky get his portion?

  7. Odie that was so very nice of you! I think I've shared with you previously my love for using a pressure cooker. I know you said yours is electric, what brand? Do you prefer it to the old rock n' roll type?

  8. this is neat Odie because i've been thinking about making chicken salad. the only difference being my wife and i prefer dark meat:) she generally complains about my making dishes big enough to "serve an army" but since we have house guests now maybe she won't complain this time. btw...my wife is big on pressure cookers. i'm more of the slow stewin` type of guy....in more ways then just cooking!

  13. Wow. Pressure cookers have certainly changed since I last saw one. My mom had one: she'd screw on the top and we just prayed the thing wouldn't explode.
