A-Z Challenge Recipes "C"
Chicken Enchilada Casserole: Ingredients: 1 Chicken, cooked, boned and diced 1 Can cream of mushroom soup 1 10 oz. jar taco sauce 1 Large onion chopped 1 Family size bag Frito corn chips Shredded Mozzarella cheese Sprinkle Fritos (1/2 Pkg) into greased baking dish. Mix chicken, soup, taco sauce and onion together. Pour over Fritos. Sprinkle grated or shredded Mozzarella cheese over the mixture. Finish with a layer of the rest of the Fritos on top. Bake at 350 degrees for 30 minutes. Can be made a day ahead. Cheese Potatoes: 20 oz. Shredded cheddar cheese, reserve 8 oz. 2 lbs. Frozen hash browns 1 can Cream of onion soup 1 can Cream of cheddar soup 2 Cups sour cream Mix all ingredients together and pour into a 13 X 9 pan. Spread the reserved cheese on top. Bake at 350 degrees for 45 minutes to 1 hour.

Excellent recipie! I used to make a salad that had corn chips and beans in it and it was delicious.
