Jambalaya


Jambalaya:


Ingredients:


1 Tbl unsalted butter

1 Cup smoked sausage, diced

1/2 Cup onion, diced

1/2 Cup bell pepper, diced

1/2 Cup celery, diced

2 Tbl garlic, minced

1/2 Cup tomatoes, diced

1/4 Cup tomato sauce

1 1/4 Cup chicken stock

3/4 Cup long grain rice

1 Cup boneless chicken breast, diced

2 Bay leaves, crushed or ground

1/2 Tsp dried thyme

1/4 Tsp ground sage

1/4 Tsp dry mustard powder

1/2 Tsp freshly ground black pepper

1/2 Tsp ground white pepper

1/2 Tsp cayenne pepper

1 Tsp salt

1/2 Tsp onion powder



Preheat oven to 350 degrees. Melt the butter, saute the smoked sausage until slightly browned. Add half of (onion, bell pepper & celery) saute until tender. Add tomato and cook about a minute, then add the tomato sauce, cook 1 minute more. Add the garlic & rice, cook 1 minute. Add the stock, spices & other half of veggies and raw chicken. Stir well and bake uncovered for about 30-40 minutes, or until the rice is cooked, but still has a little bite. Top with chopped green onions. This will feed 2 to 3 people.
